But the memory of man is short, and already many of the dishes made of old are no longer stylish, and people have forgotten them, which is a great ill, since they are both healthful and pleasant to the taste. And so it is fitting that I should take pen in hand to tell of the cooking of my country, that it be not lost in the passage of time.
