Chard and spinach beet are grown for the leaves which are used as a potherb. Garden beets are grown for the roots which are eaten cooked, as a vegetable, in salads or pickled. Mangels, developed from chard, are an important cattle food in Europe. From the mangel the sugar beet was developed. By selection, the sugar content has been raised from 5 to more than 20%. About one-third of the world's production of sugar is from sugar beets, the second most important source of sugar.
