In a medium sized skillet, heat celery, parsley and 1 inch water to boiling over high heat. 2. Reduce heat to low, cover and cook celery until tender, about 10 minutes. Un cover and continue to cook, stirring constantly until all liquid evaporates, ab out 15-20 minutes. Transfer to a medium bowl. 3. In the same skillet, melt butter over medium heat. Stir in flour until smoot h. 4. Gradually stir in milk and cook stirring constantly until sauce thickens. 5. Stir in cream cheese, basil, chives and salt. Cook until cheese melts. 6. Return celery to sauce; heat mixture just to boiling and serve immediately. Notes: If using fresh herbs which is preferable, then use 1 Tablespoon for each 1 tsp required of the dry.
